The 4 C's of a charming creation - Chewy Chocolate Chip Cookies!

I've been through many chocolate chip cookie recipes and finally found one that I thought was the best so far, until one day, when my husband made the cookies with a few recipe mistakes and then we were left with cookies even better than before! If you have gotten a chocolate chip cookie recipe from me previously to this post - you can throw it out because this one I'm keeping for a LONG time!


Colette's (and Ara's) Chewy Chocolate Chip Cookies!

2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup salted butter - ROOM TEMPERATURE!
1 cup packed brown sugar (dark if you got it but not required)

1/2 cup pure cane sugar - I recently used Zulka brand pure cane sugar, its in a clear bag and the sugar looks tan rather than white in color and more coarse - its flavor was superior to the typical white granulated sugar - if you only have the white sugar that's okay too but if you can - try out the Zulka brand - I was totally surprised and impressed! So far its great for cookies but I did use it to make brownies and it came out gritty.

1 Tbsp Vanilla extract
1 egg
1 egg WHITE
1 cup Semi sweet chocolate chips


Pre-heat oven at 350 degrees F

Cream together butter and both sugars until well blended
Beat in the Vanilla, Egg, and Egg White -  mix just enough to blend.
In another bowl add flour, baking soda, and salt together. Stir contents a few times then add dry ingredients slowly to the wet ingredients. MIX UNTIL JUST BLENDED - don't over mix.
If using a paddle attachment on your mixer - add the chocolate chips and mix for only 5 seconds. Other wise mix in the chocolate chips using a wooden spoon.

Drop a heaping tablespoon of dough onto ungreased cookie sheet about 2 inches apart. I prefer to use a spring loaded portion scoop to distribute the dough - it makes for even portioning, which means even baking, and its much easier than your typical double spoon or spoon and thumb scooping action. They are also great for forming meatballs too!

Bake until golden around the edges and puffy. Don't over bake them. Its generally about 10-15 minutes - every oven is different so don't depend on the baking time - Watch your cookies! : )

Let cool on the sheet for about 1 minute then transfer to wire cooling racks or another plate/tray.
